Rubinstein was born on July 11, 1952 in Queens, New York, United States; the son of Jack and Jeanne Rubinstein.
Rubinstein received a Bachelor`s degree from Brandeis University in 1974. Five years later he earned his Master`s degree in Theology from Harvard Divinity School.
Then in 1985, Ernest was given a Master of Arts degree in Jewish studies from Hebrew Union College-Jewish Institute of Religion. Also in 1995, he received a Doctor of Philosophy degree in Jewish theology from Northwestern University.
Rubinstein began his career as an ecumenical librarian at Interchurch Center in 1994 and held it for eleven years. Since 1995, he has been an adjunct assistant professor of humanities at New York University School of Professional Studies.
In 2001, Rubinstein took a position of a book reviewer at Publishers Weekly. Then in 2005, Ernest was appointed a theological librarian at Drew University. Nine years later he became a part time lecturer at Rutgers University and held the position for a year.
