Carol Nadine Simontacchi was born on July 6, 1947 in Bellingham, Washington, United States; the daughter of Ralph Eugene Walmer and Sylvia Arleta (Tyler) Walmer.
Carol Simontacchi received a Bachelor of Science and a Master of Science degrees from Columbia Pacific University.
Carol Simontacchi wrote a popular column, the Holistic Health Notebook, which appeared in several newspapers, including Florida Weekly. Her column detailed health issues and wholesome solutions to fixing them. She was the owner of Island Nutrition Center in Sanibel. Carol also served in Safe Harbor Community Church.
Simontacchi authored a number of books on nutrition, including The Crazy Makers: How the Food Industry Is Destroying Our Brains and Harming Our Children and Your Fat Is Not Your Fault. Carol hosted Your Personal Health, a nationally syndicated radio show that aired on more than 200 stations.
