Mattox received the degrees of Bachelor of Education in 1973 and a Master of Arts degree in 1974 from the University of Mississippi. In 1979, he was given a Doctor of Philosophy degree from the same university.
Mattox began his career as a teacher of science at Kossuth High School in 1973. Two years later he took a position of an instructor of science at Itawamba Community College. Then in 1981, Johnny became an instructor of biology at Northeast Mississippi Community College.
Also he served as an associate professor of biology at Blue Mountain College from 2005 to 2010. Since 2010 Johnny has been a professor of biology and chairman of the mathematics and natural science department at the same college.
Mattox is a member of National Science Teachers Association, Association of Southeastern Biologists, Mississippi Academy of Sciences, Mississippi Science Teachers Association, National Association of Biology Teachers, Alcorn County History Society, Kossuth History Society, Kappa Delta Pi, Phi Theta Kappa and Phi Kappa Phi.
On August 11, 1973 Johny Mattox married Glenda Jean Eaton. They have three children.
