(Principles of Sensory Evaluation of Food covers the conce...)
Principles of Sensory Evaluation of Food covers the concepts of sensory physiology and the psychology of perception. This book is composed of 11 chapters that specifically consider the significance of these concepts in food sensory analysis. After providing a brief introduction to problems related to sensory evaluation in food industry, this book goes on examining the physiology and psychology of the senses. The succeeding chapters survey the status of methodology and appropriate statistical analyses of the results. These topics are followed by discussions on the problems of measuring consumer acceptance. Food acceptance and preference depend on human sensory responses. The remaining chapters describe the relationship between sensory characteristics and various physical and chemical properties of foods. This book will prove useful to food scientists and researchers.

Maynard Andrew Amerine was born on October 30, 1911 in San Jose, California, United States in the family of Roy Reagan Amerine and Tennessee Davis Amerine. He grew up on the farm of his parents in Modesto, California.
Amerine was educated at the University of California-Berkeley and got his B.S. in 1932. He joined the newly created Department of Viticulture and Enology at the University of California at Davis in 1935. In 1936 he acquired a Ph.D. in Plant Physiology at the University of California-Berkeley.
Amerine joined the Department of Viticulture and Enology at the University of California at Davis in 1935. In 1942-1946 he served in the Army of the United States. Among his most notable contributions to the field was the “region system” of grafting and replanting, which he developed with colleague Albert J. Winkler in the 1940s. He achieved the rank of professor in 1952, was became All-University Lecturer in 1962, and continued his research and teaching at the University of California until his resignation in 1974. He nevertheless still remained honorable Professor Emeritus, worked as an advisor at the Wine Institute in San Francisco, and continued his scientific and advising activities on wine production and evaluation up to the moment when his Alzheimer’s disease made him to retire shortly before his death in 1998.
The recommendations outlined in Amerine’s numerous research papers and books over his six decades of professional activity have been credited with revitalizing the California wine industry following the repeal of Prohibition and helping California growers achieve world-class status. In addition to researching the role of climate in wine production, Amerine studied such facets of the wine industry as fermentation, soil analysis, technology, and sanitation issues. A consultant to numerous fledgling U.S. wineries, Amerine also advised foreign governments in developing national wine industries.
