1911 defended doctor’s thesis on the effects of acids and alkalis on phenolase and peroxidase. Did research on biochemistry at Professor V. South. Gulevich’s Laboratory, Moscow University. 1918, together with A. North. Bakh, founded Karpov Chemical Institute.
1920 founded Biochemical Institute, Russian Soviet Federative Socialist Republic People's Commissariat of Health (now Biochemical Institute, Union of the Soviet Socialist Republics Academy of Sciences), where he engaged in research work until 1930. From 1930 founder-director, Institute of Nutrition, subsequently incorporated in the Union of the Soviet Socialist Republics Academy of Medical Sciences. 1945-1952 head, Laboratory of Cancer Biochemistry, Union of the Soviet Socialist Republics Academy of Medical Sciences.
From 1923 head, Chair of Biochemistry at Pedológica! Institute, then 2nd Moscow Medical Institute. 1934-1954 head, Chair of Biochemistry, 1st Moscow Medical Institute. First director, Laboratory at Lenin Mausoleum.
Studied role of erythrocytes in protein metabolism, particularly in the mechanism of the transportation of amino acids. Proposed theory whereby erythrocytes act as a physiological depot of amino acids and control their content in the blood plasma. Studied the chemism of immunity.
Established that some amino acids neutralize the effects of diphteria and tetanus toxins and hypothesized that amino acids and the products of protein decomposition could be used for therapeutic purposes. Determined the amino acid content of proteins in food products and the organs of the human body, research which proved of considerable importance to comparative biochemistry, to clinical practice and for estimating the body’s nutrient amino acid requirement. His research on cancer biochemistry showed that tumor proteins have an amino acid composition which differs from the proteins of normal organs and tissues.
Hypothesized that tumors contain a special tumor protein formed by distortion of protein synthesis under the effects of carcinogenic factors. Contributed to the produktion technol of methyl alcohol, acetone and the dry distillation of wood. Devised an original means of producing chloroform.
Synthesized an antiseptic preparation called “Zbarskiy’s bactericide” and a hydrolysis preparation called “Parentit” for parenteral protein nutrition, widely used in clinical practice. Together with V. P. Vorob’yov, embalmed Lenin’s body. 1949 directed team which embalmed body of Bulgarian Communist leader Georgiy Dimitrov.
1917 elected chairman, Yelabuk Uyezd Soviet of Workers’ and Soldiers’ Department. 1926 and 1931 founded respectively journals “Eksperimcntal’naya biologiya i meditsina” and “Voprosy pitaniya”. Published some 70 works.
