This book is not about eating disorders, dietary problems or proper nutrition. Instead it explores in depth the complex meanings attached to food and eating. Food and Transformation is a cornucopia of psychological insights on nourishment and eating as expressed through dreams, myths and customs, and through the half-hidden images incorporated in language.
Jackson graduated from Oxford University with a bachelor's degree in 1966. She then received her master's degree from it in 1970. Jackson also obtained a diploma from Mayo School of Astrology in 1978 and a diploma from Westminster Pastoral Foundation in 1985. In 1994, she received a diploma from the Independent Group of Analytical Psychologists.
Jackson works as a teacher of English as a foreign language, practising astrologer, counsellor and writer. She is also a teacher of T’ai Chi Ch’uan. She works and lives in London, England.

Jackson is a member of the International Association of Analytical Psychologists, Guild of Pastoral Psychology, Astrological Association of Great Britain, Independent Group of Analytical Psychologists, Astrological Lodge of London and C. G. Jung Analytical Psychology Club.
Jackson is married to David Stevens since June 24, 1981. The couple has no children. Her previous marriage was with Stuart Sheild and ended in divorce.
