Winchester attended the University of Wisconsin–Madison to played four seasons (1970 – 1974) of National Collegiate Athletic Association hockey with the Wisconsin Badgers, scoring 40 goals and 44 assists for 84 points in 144 games played.

He was selected by the Saint Louis Blues in the 8th round (121st overall) of the 1972 National Hockey League Amateur Draft. Winchester went on to play the 1974-1975 season with the Denver Spurs of the Central Hockey League (1963-1984), and played the 1974-1975 season in both the International Hockey League and American Hockey League before hanging up his skates. In December 2012, Gary, along with his National Hockey League playing son Brad Winchester, were honoured by the Wisconsin Badgers when they were selected as honorary captains for the team"s games held on December 13 and 14.
