During the 1950s, Gilles Aillaud mainly depicted marine landscapes and birds. He used the mixture of different materials for the representation of a predator, including plaster, cotton, and netting. The artist used plastic and sand for the representation of the sea and the shore. All these subjects were substantial parts of his future style.
In 1952 he held his first solo show at the Niepce Gallery in Paris. For the next several years Gilles Aillaud worked in total isolation from the inner world. In 1961, he got acquainted with Eduardo Arroyo, with whom Aillaud shared the same views in art and politics.
In his works on paper, Aillaud uses watercolor and lithography techniques, with an economy of means and a great simplicity: for example, a crocodile is suggested by a black line with a few shadows, a lion and some monkeys are suggested by a few colored spots.
As a theater designer, he began working actively in 1974. Gilles Aillaud's most important collaborations were with Klaus Michael Grüber at the Schaubühne in Berlin and with Giorgio Strehler at the Piccolo Teatro in Milan. Besides, Aillaud wrote two plays, Le Masque de Robespierre and Vermeer et Spinoza, a collection of poems (Dans le bleu foncé du matin), as well as theoretical essays on pictorial representation.

In 1964, Gilles Aillaud became a member of the Comité du Salon de la jeune peinture (The Committee of the Salon for Young Painting) and one year later he was elected to become the president of the Committee.
In 1962 Aillaudhe married Camille Couturier. The couple had a daughter, Marie Aillaud, who was born in 1965, and a son, Arthur Aillaud, born in 1973.
