Kanski was born on August 5, 1939 in Warsaw, Poland; the son of Jerzy Jordan Kanski and Adela Jozefa (Wroblewska) Kanski. He moved to United Kingdom in 1946.
Kanski studied at Mayfield College. In 1963, he earned his Bachelor of Science and Bachelor of Medicine degrees from London Hospital Medical College (nowadays Barts and The London School of Medicine and Dentistry). Jacek graduated from the University of London. Also he has the degrees of Doctor of Medicine and Master of Science.
Kanski began his career as a house officer at London Hospital (nowadays Royal London Hospital) in 1963 and had held it for a year. In 1965, he was a senior house officer at Western Eye Hospital. The same year Jacek took a position of a registrar at Westminster Hospital. Then in 1966, he became a resident at Moorfields Eye Hospital. Also he served as a senior registrar at London Hospital from 1970 to 1974. In 1974 Kanski began to work as a consultant surgeon at King Edward VII Hospital. Nowadays he is an honorary consultant and ophthalmic surgeon of the Prince Charles Eye Unit at the same hospital.
Kanski is known for his books "Synopsis of Clinical Ophthalmology", "Signs in Ophthalmology: Causes and Differential Diagnosis", "Ophthalmology In Focus" and others. His sixth edition of the book "Clinical Ophthalmology: A Systematic Approach" received first place in the ophthalmology category at the 2008 BMA Medical Book Competition.
