Marcelle wrote a written a weekly food column, Creole Cooking, for "The Times Picayune of New Orleans" for over 30 years. She is the author of the books: "Who’s Your Mama, Are You Catholic and Can You Make a Roux?, Who’s Your Mama... (The Sequel)", "Cajun Cooking for Beginners" and "No Baloney on My Boat". She worked as a feature writer in New Orleans in 1967-1971 and as a researcher and consultant at Time-Life Books, New York in 1971. She owned and operated a restaurant, Chez Marcelle, near Lafayette, Louisiana, in the early 1980s, and has worked for several restaurants, including Commander’s Palace and K-Paul’s Louisiana Kitchen in New Orleans. She worked as an author of the weekly column “Cooking Creole” at Times-Picayune since 1984. She was a food writer at Times of Acadiana since 1986 and a cookbook writer at Emeril’s Restaurant 1993. Currently she is a chef/instructor at Nicholls State University in the Chef John Folse Culinary Institute in Thibodaux.
