Olsbye was born on March 9, 1964 in Hamar, Norway; the daughter of Magne and Gunvor Olsbye.
Olsbye received a Master of Science degree in chemical engineering from Norwegian Technology University in 1987. Four years later she was given a Doctor of Philosophy degree in chemistry from the University of Oslo.
Olsbye began her career as a senior scientist and group leader at The Foundation for Scientific and Industrial Research in Oslo in 1991. Nine years later she became a research and development manager at NORDOX Industries AS. Since 2001 Unni has been an associate professor at the University of Oslo.
She served as the Managing Director of inGAP, a national center of excellence in research-based innovation from 2008 to 2015. She had sabbatical visits to the University of Berkely with professor Gabor Somorjai in 2012 and the IRCE University in Houston with Dr. Yves Schuurmann in 2013.

2014On December 29, 1989 Unni Olsbye married Tommy Pedersen. They have 2 children.
