Kellogg was born on June 5, 1832 in Utica, New York, United States; the son of Henry and Serena (Beach) Kellogg.
Kellogg graduated from Albany State Normal School in 1851. Six years later he received a Master of Arts degree from Hamilton College.
Kellogg began his career as an instructor at Palmyra Union School in 1851. A year later he took the same position at State Normal School. Then in 1856, Amos became a principal at New Jersey Preparatory Normal School, where he worked until 1857.
Also he served as a principal at Union School from 1861 to 1863. In 1866, Kellogg held the same position at Bergen Institute. In 1875, he was appointed an editor of The School Journal and held it for twenty nine years.
