In 1973 Joe Gantz studied photography and creative writing at Cornell University. In 1974 he studied creative writing at Stanford University and later a Spanish language and literature at National Institute of Technology of Mexico in 1975. In 1977 Gantz received a Bachelor of Arts degree in fiction writing from the University of Wisconsin.
In 1976 Joe Gantz was a founding editor at the View Press, Inc. In the same year, he was a director and coordinator of the Stream of Theatre, an improvisational theatre group. In 1977 Gantz was a coordinator und director of the Photo Improve, a photographic improvisational theatre group. In 1979 he became an instructor in creative writing and photography at the Green Mountain Workshop in Bennington, Vermont. In 1980 Joe Gantz was an instructor in creative writing at the Community Workshop in Bennington, Vermont. In 1984 he was a co-founder of the View Film and Video, Inc., a film company. In 1985 Gantz became a producer and co-director of Couples Arguing, a television documentary.
His photographs were exhibited at the Robert Samuels Gallery, New York City (1981), Foto Gallery, New York City (1982), Le Reverbere Gallery, Lyon, France (1984), Forum Fotogalerie, Tarragona, Spain (1984), Photogalerie The Compagnie, Hamburg, Germany (1984), Frankfurter Kunstverein, Frankfurt, Germany (1984), Georges Pompidou Center, Paris, France (1984), Torch Gallery, Amsterdam, the Netherlands (1985), Galerie Junod, Lausanne, Switzerland (1985), Munich Stadtmuseum, Munich, Germany (1985), etc.
His first documentary film with his brother, Harry Gantz was "Couples Arguing" (2000), captured couples in the midst of actual arguments filmed in progress in their own homes. The film was broadcast and distributed around the world, and was honored at the Edinburgh Television Festival. They executive-produced the CBS drama series "The defenders" (2010), starring Jim Belushi, based on a documentary pilot they created about the lives of two Las Vegas defense attorneys and the cases they defend. In 2011, Joe Gantz independently-produced the documentary "Destination: Change Our World" for Amnesty International about the human rights organization's first-ever Youth Summit in Berkeley, California.
