Gilbert qualified in 1978 with Theodore Goddard, a London firm founded in 1902 by the solicitor John Theodore Goddard. Goddard had begun practising from Clement's Inn, and the firm grew through amalgamations and developed a general practice with an emphasis on high-profile private client work. Its offices were destroyed in a German air raid in 1941, after which it moved to New Court behind the Law Courts and later to the City of London in 1965.
By April 1983 Gilbert had become a partner in the firm's property department, and by 1986 he was an equity partner. From 1997 until 2003 he headed the property group. Theodore Goddard merged with Addleshaw Booth & Co, a Manchester-based English firm with a small London office, on 1 May 2003 to form Addleshaw Goddard, which began with about 174 partners and bases in London, Leeds, Manchester and Brussels. Gilbert continued as a full equity partner in the merged firm and sat on its Management Board from 2006 to 2010, leaving in April 2011.
From May 2011 to September 2012 he worked at Devonshires, a smaller niche firm in the City of London. From October 2012 he has practised with Gordons Solicitors, where his work has covered residential and commercial property, including secured lending for borrowers and lenders and property development within England.
