Wellborn was born on October 21, 1947 in Galveston, Texas, United States; the son of Olin Guy Junior and Betty Jean (Merriman) W.
Wellborn was given an honorary degree of Bachelor of Arts from Harvard University in 1970. Three years later he received an honorary degree of Juris Doctor from Harvard Law School.
Wellborn began his career as a law clerk at Wellborn & Britt in 1971. A year later he held the same position at Baker & Botts. He worked as a law clerk at the United States Court of Appeals from 1973 to 1974.
In 1974, Olin was appointed an assistant professor of law at the University of Texas School of Law and held it for three years. In 1977, he became a professor of law at the same school, where he worked until 2017.
In 1978, Wellborn was a visiting professor of law at Harvard Law School and at the University of Michigan Law School in 1987. Then he served as an associate dean for Academic Affairs at the University of Texas School of Law in 1987-1991. In 1985, Olin held the position of a William C. Liedtke, Sr. Professor of Law at the same school and held it for thirty-two years.
