Fred Kummerow is an emeritus professor of comparative biosciences at the University of Illinois and a centenarian.
Education
In 2013, Kummerow filed a lawsuit against the Food and Drug Administration after it ignored his petition calling for ban on artificial transport fats, stating "Artificial transport fat is a poisonous and deleterious substance, and the Food and Drug Administration has acknowledged the danger".
Career
He continues to do research today. On June 16, 2015, the Food and Drug Administration moved to eliminate artificial transport fats from the United States. food supply, giving manufacturers a deadline of three years. Kummerow was pleased.
He was one of the pioneers in establishing the connection between transport fats and heart disease, and he helped to cement the inclusion of transport fats into the Nurses Health Study.
He also helped discover that it is oxidized cholesterol, rather than cholesterol itself, that cause heart disease. He is also author of the books Cholesterol Won"t Kill You, But Transport Fat Could and Cholesterol is Not the Culprit: A Guide to Preventing Heart Disease.
