In 1973 Arthur Agatston was a graduate of New York University School of Medicine with a Doctor of Medicine degree. He had specialized medical training at Montefiore Medical Center, Albert Einstein College of Medicine, and New York University.
Arthur Agatston is the cardiologist who developed the popular South Beach Diet, not as a weight-loss program, but as a way to help his patients avoid heart attacks and strokes. The medical community's understanding of cholesterol and lipids had advanced, and Agatston suspected more could be done. He did know that his patients who followed the American Heart Association diet were gaining weight, and their blood chemistries were not improving. He began to look into diets and insulin resistance.
Agatston and colleague Warren Janowitz, a radiologist, did early work measuring calcium in the coronary arteries as a way of predicting heart attack and stroke. Agatston is a developer of the electron beam tomography scan or EBT. which detects coronary artery disease, the scores from which are measured on the “Agatston Scale." EBT is used worldwide and in major universities and medical centers in the United States, including Johns Hopkins and the Mayo Clinic.
Agatston's research led to his development of the South Beach Diet, which improved cholesterol and insulin levels, and which also helped people lose weight. Agatston presented his findings at a national meeting of the American Heart Association and the American College of Cardiology. News of his work was picked up by the Miami media and Miami-area chefs began developing menus based on his recommendations.
In the first phase of the diet, bread, potatoes, pasta, rice, fruit, and alcohol are prohibited. Dieters rely on lean meats, low-fat dairy products, and low-carb vegetables, particularly green vegetables. A weight loss of between eight and fourteen pounds is normal after this two-week period. In the second phase, liber-rich carbohydrates, like whole-wheat bread, and some fruits, are added in moderate amounts. The third phase is followed for life and is not really a diet, but a lifestyle guide to good health.
The South Beach Diet Cookbook: More Than 200 Delicious Recipes That Fit the Nation's Top Diet contains recipes from Miami Beach chefs and others who have designed them to fit within the diet's three phases. Included are dishes for main meals, as well as desserts. snacks, and foods for entertaining. He has appeared on national television shows, including Dateline, Good Morning America, and 20/20.
Currently, he is a clinical professor of medicine at the FIU Herbert Wertheim College of Medicine as well as a clinical associate professor of medicine at the University of Miami Miller School of Medicine, and he serves as the medical director of Wellness and Prevention for Baptist Health South Florida. He spent 20 years as director of noninvasive cardiology at Mount Sinai Medical Center in Miami Beach where he trained cardiology fellows while doing research and clinical cardiology.
Today, Agatston's cardiology practice is part of Baptist Health South Florida. It’s devoted to preventive cardiology and helping his patients attain optimal health. He, along with his colleagues, have recently developed a Virtual High Cardiac Risk Family Surveillance Program to prevent heart attacks and strokes in the family members of those with strong family histories of heart disease, no matter where they reside. He continues to be involved in research and lectures on cardiac prevention, nutrition, and lifestyle nationally and internationally.

2011Arthur Agatston studied everything about lipids and diet and the role prevention played. He developed theories based on the glycemic index, which reflects the body's blood sugar and insulin response to various foods. His studies tested whether by stabilizing insulin levels, hunger and cravings could be controlled, thus leading to weight loss, improved blood chemistries, and consequently the prevention of heart attacks and strokes.
