Samson Oyeyinka attended Adedoja Memorial School, proceeded to Ikorodu High School, Lagos, where he finished is Senior Secondary School. He thereafter attended Lagos State Polytechnic where he obtained his National Diploma in Food Technology in 2003. Samson Oyeyinka bagged a First Class Honours Degree in Food Science from the Ladoke AKintola University of Technology in 2008. He was the Best graduating student in his set. He proceeded to the University of Ibadan, where he obtained a Master Degree in Food Technology with distinction. Now, Dr. Samson Oyeyinka having completed his Doctorate at Durban University of Technology, Durban South Africa.
Dr. Oyeyinka is a young intelligent man with a strong passion for teaching and innovative research. His long-term goals are to engage in capacity building through training and mentoring of students for the industry, academia and research institutes. His research interest focuses on value addition to underutilized and neglected crops through characterization and modification of their biomolecules such as starch for improved functionality and application. Specific areas include understanding the relationships between structural and functional properties of starch, enzymatic hydrolysis of starch, development of resistant starch and other dietary fibers for food applications and development of value-added products from pulses and cereal grains.
