Stewart received a Bachelor of Arts degree from Yale University in 1942. Thirteen years later he earned his Master of Arts degree from Harvard University.
Immediately after graduation, Stewart joined the army for two tours (1943-1947), having been recruited by Edwin O. Reischauer to learn Japanese and serve in military intelligence; he was based in Washington, D.C., London, and Paris and rose to the rank of captain. During the Korean War (1951-1953) he was recalled to active duty with a NATO delegation again in London and Paris, where he served in diplomatic liaison.
Stewart began his career as a junior fellow at Harvard University in 1949. In 1953, Zeph was appointed an associate professor at Harvard University. In 1962, he became a professor of Greek and Latin at that university. Nineteen years later Stewart took a position of the Andrew W. Mellon Professor of Humanities at Harvard University, where he worked until his retirement as a professor emeritus in 1992.
In addition, Zeph served as the Allston Burr senior tutor at Adams House of Harvard University from 1955 to 1960. In 1963, he became a teacher at Lowell House of that university and held the position until 1975. In 1985, Stewart was appointed a director at the Center for Hellenic Studies, serving until 1992.

Stewart was a member of the American Academy of Arts and Sciences, American Philological Association, Society for the Promotion of Roman Studies, American Archeological Institute, Society for the Promotion of Hellenic Studies, Classical Association of the United Kingdom, Elizabethan Club, Signet Society, Phi Beta Kappa and Delta Kappa Epsilon.
On December 29, 1959 Zeph Stewart married Diana Childers. The marriage produced three children.
