Europe needs our food, needs it in larger quan tities than under present conditions we are able to provide. This assertion, literally true at this hour, shall remain true only in so far as we ignore the undeveloped resources that lie at hand. It will re main true only in so far as it rests upon our wasteful standards of the past, our pinched capacities of the present and our failure to heed the unpromising prospects of the future.
Certain changes in our old standards and certain extensions in our present capacities have been urged by earnest and patriotic men. But, at their best, they fall far short of the service which the President expects us to render, which he promised we would render, and which every one of us in abundant and heroic measure is eager to render.
Our lofty expectations cannot be realized. Our earnest promise cannot be fulfilled. Our high duties cannot be discharged unless we go much farther than any of the suggestions heretofore offered or any of the plans now contemplated.

The exhibitions are wholly devoid of any hint of the truth that would inspire the student to question their authenticity or to challenge their genuineness. On the contrary they are so presented as to impress the novice with the conclusion that here, at last, are the results of years of laborious scientific research.
An utter lack of candor characterizes the printed word by which they are described. The subtle omis sions by which the fanciful labels and charts aecom panying the exhibits are distinguished have so much significance that the desired effect of plausibility is intensified through their suppression.

Alfred Watterson McCann was an American journalist and pure-food crusader.
Background
Alfred Watterson McCann was born on January 9, 1879 in Pittsburgh, Pennsylvania. He was the son of Michael McCann, a printer and engraver of Irish birth, and Maria Watterson, whose ancestors had come to Pennsylvania in 1762. During his youth he suffered from an ailment that he believed was remedied by proper diet. This experience marked the beginning of his life-interest in food.
Education
After attending Mount St. Mary's College, Emmitsburg, Md. , he was graduated from Pittsburg College of the Holy Ghost (now Duquesne University) in 1899, remained there as an instructor in English, mathematics, and elocution, and studied nutrition in his spare time.
Career
McCann was engaged to write advertisements for various food concerns, including Francis H. Leggett & Company. In 1912, when Harvey W. Wiley resigned from the government service, McCann became impatient of pure-food reform through federal action and turned to newspaper propaganda, outlining his program in a full-page article, "The Pure Food Movement, " in the New York Globe for October 24, 1912. He was able to arouse public interest by his bitter personalities, his unearthing of startling news, and his torrent of catchy phrases. During the next ten years he wrote for the Globe series after series of sensational articles against manufacturers who used coal tar dyes, bleaches, inert fillers, and injurious preservatives, and against public officials who condoned such abuses.
The Globe provided him with a laboratory and stood behind him in the ensuing law suits. He took part in many inquiries such as that into the food at Ellis Island (September 1913), the milk supply of New York City (1919), and the egg supply (1921). In 1913 he published Vital Questions and Answers Concerning 15, 000, 000 Physically Defective Children and Starving America. In 1917 he produced a war emergency food book, Thirty Cent Bread, which urged the advantages of using cornmeal, of dehydrating instead of canning fruits and vegetables, and of killing off grainconsuming steers. These suggestions were the basis of an article in the Forum (October 1917) severely criticizing the United States Food Administration. He insisted continually on the value of the mineral salts in food in This Famishing World and in The Science of Keeping Young (1926). He wrote for the New York Evening Mail after the Globe suspended publication in 1923, and established the Alfred W. McCann Laboratories, Inc. , in New York, whence issued a stream of indorsements of special brands of everything from chickens to cigars. In 1928 he began to broadcast food talks over the radio. He died of a heart attack January 19, 1931, just after an hour of broadcasting.
Achievements
After publishing a violent antievolution book, God or Gorilla (1922), McCann received the degree of LL. D. from Fordham University. His Greatest of Men Washington (1927) was a laudatory volume written to inspire young people.
